exactly, the problem was 2 fold, 1 they were using the wrong type of gum arabic, 2 they were using the wrong instruments. That said it was rather obvious that you could simply have used a more powerful mixer, if they are going to continue to make this themselves they should check out a restaurant supply company and take a look at what they use for bakeries. I'm sure they would find a cheaper solution in the long road. (cheaper being labor/replacement parts). I sense that's what the op of this thread was implying and I would tend to agree with him, though I'm sure that they had no knowledge of the properties of gum arabic in particular, the idea of starting a project and doing this research to recreate a recipe and not having proper tools like measuring cups, is quite funny and no doubt why the spokesman from coke was nonplussed.
